Entry 2 (4-30-19)

Today has been another day of reaching out to restauranteurs. However in addition to those who run restaurants, the other facet of this project is being fleshed out. Part of our exploration of the food industry will be exploring the process in which restaurants receive their food and materials to sustain themselves. This will largely include interviewing farmers, butchers, bakers, cheese makers, and fishermen. Having made contact with multiple people from diverse parts of the industry we and our clients are excited to begin interacting with each other. With these plans set, revisions have been made to our calendar. Our focus will be expanding to the bigger picture of the general food industry in Boston. One restaurant in particular will be the soon to open Faraway, run by the Pattavina sisters. Our work involves helping them on their path to opening their Cambridge based establishment. 

In addition to this, more research will be done on parts of the food industry that we cannot access. Part of this is comparing foreign city food cultures to Boston’s. One example would be Ivan Orkin’s Ivan Ramen, based in Japan but now world famous. This documentary showed how he was able to assimilate to a different culture, and create his own restaurant based on an already popular dish. Furthermore, the documentary focused on how running a restaurant in a foreign country became such a culture shock.
