Our first day in Hingham has been a great time to plan out specific times to meet with owners of restaurants, critics, and other connections in which we will be able to immerse ourselves in Boston’s food industry. In the near future, we plan to meet experts in different fields of the food industry. Our tentative schedule allows for us to meet those who work in the restaurant front, the kitchen staff, and those who supply restaurants with the materials necessary for business. A few of those people are Jim Cochener, Meredith Yerkes and Kat Savoia.
Our research has also included exploring the food industry ourselves. This includes relevant podcasts and documentaries explaining the behind the scenes work of opening and sustaining and restaurant, and the insight current successful owners have. The documentary watched is part of the “7 Days Out” Netflix series showing the behind the scenes work needed to bring the largest events in the world to life. The specific episode is about reopening the Eleven Madison Park restaurant after extensive renovations were completed. The podcast we listened to is an episode of Here & Now by NPR. Part of the focus was on Ashley Christensen, a James Beard Award recipient. She brought unique perspective into the restaurant business as she is able to share the experiences of running 5 restaurants.
